    1 tablespoon olive oil
    1/2 cup bell pepper, chopped
    1/2 cup onion, chopped
    1/2 pound spicy Italian chicken sausage
    1/4 cup parmesan, shredded
    2 tablespoons pine nuts
    1/4 cup seasoned bread crumbs
    2 tablespoons tomato paste
    1 large egg, lightly beaten
    1 zucchini


Preheat oven to 400 degrees Fahrenheit.

Cut the ends off of the zucchini and cut in half lengthwise. Scoop the seeds out with a spoon, reserve for later. Place the zucchini on a lined baking sheet, spread 1 tablespoon of tomato paste onto each half, sprinkle with salt and pepper. Place in oven for 5 minutes.

Heat oil over medium high heat. Cook bell pepper and onion until soft. Add sausage. Cook mixture until meat is browned.

Place cheese, pine nuts, and bread crumbs in food processor and blend until coarse crumbs are created.

Mix sausage mixture, cheese mixture and egg together. Spread half of mixture onto each zucchini half.

Bake in oven for 15 minutes, or until filling is crispy and golden.
