Introduction

Number of Servings: 5

Ingredients

    3/4 lb rice noodles (dry)
    5 large leaves lettuce (~3 c shredded)
    3 medium tomatoes, chopped
    3 Tbsp vegetable oil
    1 Tbsp soy sauce
    1 Tbsp garlic, coarsely chopped
    3/4 lb ground beef
    2 Tbsp fish sauce
    1 tsp curry powder
    1 tsp sugar
    1 1/2 c chicken broth
    2 Tbsp cornstarch, dissolved in 3 Tbsp water (I used remaining broth from the can)
    1/4 c cilantro, chopped

Tips

Although recipe gives calorie counts including fat, draining the fat (which McDermott doesn't specify in her recipe) helps keep the greasiness (& fat levels) in control. Original recipe was for 4 servings.


Directions

Soak noodles in boiling water for 5 min, then drain & rinse.
Prep platter: place lettuce & tomatoes on top.
Stir-fry noodles in 2 Tbsp oil in wok, then add soy sauce & put noodles on lettuce on platter.
Add 1 Tbsp oil to wok, then stir-fry garlic, then brown ground beef. Drain off fat. Add broth, fish sauce, curry & sugar. Bring to a boil, then add cornstarch mixture & cook until thickened. Pour over platter. Top with cilantro.

Serving Size: Makes 5 2 cup servings
