Introduction

Number of Servings: 1

Ingredients

    0.5 tsp olive oil
    3 large Mushrooms, sliced thin
    1/2 cup chunky salsa, drained of most liquid
    2 cups baby spinach
    1 extra large egg
    salt and pepper to taste

Directions

Makes one serving. Heat olive oil over medium heat in a non-stick pan ( a flat bottom wok works very well) Saute mushrooms for 2-3 minutes until soft. Add spinach and salsa and saute until spinach is wilted, about 2 min. Push veggie mixture to side of pan, spray bottom with cooking spray. Crack one egg in pan and cook about 1 min, turn over easy to cook for 1 more min. Remove veggie mix to serving dish and top with egg. Salt and pepper to taste. For added protein or a heartier meal, sautee 1 diced vegetarian sausage patty with the mushrooms.

    I made this breakfast this morning and it was delicious, I never ate vegetarian sausage and it was quite tasty, my husband also enjoyed it. Thanks for the recipe will definately try again. I am posting a pic, its a great recipe - 11/21/13
