Ingredients

Quinoa, Organic; Fresh & Easy 1/4 C. dry, 2 serving
Lowfat Vanilla Soy Milk, 1.25 cup
Water, tap, .5 cup
Banana, fresh, 1 medium (1/2 mashed 1/2 sliced)
Cocoa, dry powder, unsweetened, .67 tbsp
Vanilla Extract, .5 tsp
Honey, .67 tbsp
Directions
Bring 1/2 cup of quinoa, 1/2 cup water, 1 cup almond milk, and dash of sea salt to a boil in a small pot.
Once boiling, reduce the heat to a simmer and cook stirring occasionally until all the liquid has been absorbed (about 10-15 minutes).
Remove quinoa from stove and transfer to a bowl.
Mix in the mashed banana, cocoa powder, vanilla, and honey. Stir until evenly combined.
Divide evenly into 2 bowls. Pour the remaining 1/4 cup of almond milk equally over the quinoa bowls, garnish with banana slices
Serving Size: Makes 2 servings = Approx. 1 cup each
