    6 small red and/or yukon gold potatoes, peeled
    2 small stalks of celery chopped fine
    3 tbsp. lt. mayo mixed with 1.5 tbsp.no sugar sweet relish
    2 hard boiled eggs, chopped
    2 tbsp. fresh parsley
    sea salt to taste
    fresh ground black pepper


You can cut back on all nutritional values by using only 1 egg.


Peel and chop potatoes into small pieces and boil till tender, appr. 10-15 minutes. Drain and cool completely. Make hard boiled eggs while potatoes are cooking, drain and cool completely and peel and chop.
Add all ingredients, mix gently.

Serving Size: divide bowl into 3 servings (or 6)
