    1lb bulk sausage
    1-1/2 bell peppers, chopped
    1 onion, chopped
    1/2 cup grape tomatoes, cut in half
    1 lg handful fresh spinach
    6 cloves garlic, finely chopped
    1 TBSP Coconut oil or olive oil
    3 cups eggs, beaten (I had egg beaters to use up)


Preheat oven to 375.
In a large, oven proof skillet heat oil over med-high heat. Add onions, and peppers, saute until onions are translucent and peppers begin to soften, add garlic and cook until fragrant, add tomatoes and spinach. Cook until tomatoes begin to soften and spinach is wilted. Remove from pan and set aside.
Add sausage to pan, cook stirring and breaking up, until fully browned. Drain well if using a commercial sausage. Add veggie mixture back to pan and toss to combine well. Spread mixture evenly around bottom of pan. Pour eggs in pan, covering sausage and veggies evenly. Cook on stove top for about 5 minutes or until bottom is set.
Transfer pan to oven and bake until center is set and no longer jiggles.
If desired, finish under broiler to brown the top.
