    1/2 cup Splenda No Calorie Sweetner

    3 Tbsp Instant espresso powder

    2 cups 2% Milk

    2 lrg Egg yolks

    1 tsp Vanilla extract

    6 tsp Cinnamon, for garnish

    6 tbsp Cocoa powder, for garnish


1. Mix sugar, cornstarch, and espresso powder in a medium saucepan. Whisk in milk. Bring to boil over medium heat, while constantly stirring. 20 minutes or until mixture thickens. Remove from heat.

2. Lightly whisk egg yolks in a small bowl. Whisk in about 1 cup of the milk mixture. Pour contents of small bowl into contents of medium saucepan and cook stirring constantly over medium heat for 2 minutes or until custard has thickened. Stir in vanilla extract.

3. Pour into a bowl, and place a piece of plastic wrap over the top of the bowl. Refreigerate for 30 minutes.

Fold whipped topping into the cooled custard. Spoon into 6 lovely fluted dessert cups. Refrigerate at least 1 hour.

4. To serve sprinkle with cinnamon and cocoa.
