    2 garlic cloves, minced
    1 tsp extra-virgin olive oil
    .5 tsp ground cinnamon
    .5 tsp ground coriander
    .5 tsp ground cumin
    .5 tsp paprika
    4 (6 oz) center rib pork chops, about .5 inch thick
    .25 tsp salt
    Freshly Ground Black Pepper
    4 lemon wedges

In a small bowl, combine garlic, oil, cinnamon, coriander, cumin, and paprika to form a rough paste. Press spice mixture onto both sides of each pork chop.

Lightly coat a grill or grill pan with cooking spray and heat to medium-high. Grill pork until there is no trace of pink near the bone, 6 to 8 minutes per side. Sprinkle with salt and season with pepper to taste. Divide among 4 plates and serve hot with lemon wedges.
