Ingredients

    3 cups chicken broth
    1.5 medium onion, chopped
    3 tbsp lemon or lime juice (fresh)
    1 tbsp dried parsley
    3 bay leafs (small)
    2 lbs haddock filets

Tips

spoon onions over fish for added flavor


Directions

Combine broth, onion, lemon juice, parsley and bay leaf. Bring to a boil. Place fish in boiling liquid. Reduce heat to low. Cover pan, simmer until fish easily flakes when slightly lifted with fork (about 8 - 10 mins). Using slotted spoon, carefully lift fish to serving plate.
