    2 eggs
    1/4 cup diced onion
    1/4 cup diced red capsicum
    3 diced cherry tomatoes
    1tsp fresh chopped parsley
    2tsp fresh chopped chives
    1tbsp extra virgin olive oil
    1 slice multigrain bread


1. Add oil to frying pan and heat on medium.
2. Add diced onion and capsicum and cook for 2 minutes or until onion is starting to become soft.
3. Add diced cherry tomatoes, parsley and chives and cook for a further 2 minutes.
4. Add eggs, and scramble through the indredients with spatula until mixed thoroughly.
5. Reduce heat to low and cook for 5 minutes. Meanwhile toast the multi grain bread.
6. Place toast onto plate and cover with eggs, serve.
