Ingredients

    1 medium zucchini, sliced & cut in half
    1 Tbs olive oil
    1 can tuna in water, drained
    1 cup wild rice, cooked
    2 Tbs mango peach salsa
    1/4 c. shredded monterrey jack cheese

Directions

Cook rice while slicing up zucchini. In a medium skillet over medium heat, warm olive oil and add zucchini slices. Saute until soft. Add tuna and wild rice. Mix in salsa. Cook until warm, stirring occasionally. Sprinkle on shredded cheese and let it melt.
