    8 roasted Hatch green chiles, peeled
    1 1/4 cup egg beaters
    2 Tbsp milk, skim
    3/4 tsp salt
    1/4 tsp pepper
    1 cup shredded cheddar (fat-free)


Preheat oven to 325 degrees. Grease a 10" pie plate. Split open chiles lengthwise and place in pie plate to form a crust. In a bowl, whisk eggbeaters, egg, milk, salt and pepper. Mix in the cheese. Pour egg mixture over chiles and bake for 30 minutes, or until the pie is set.
