    1/2 cup buckwheat flour
    1/2 teaspoon sugar
    1/4 teaspoon salt
    1/4 teaspoon baking powder
    1/4 teaspoon baking soda
    1 egg, separated
    1/2 cup plain regular yogurt
    1 tablespoon oil (I like melted coconut oil or melted butter)
    1 teaspoon molasses (measure with an oiled teaspoon)


Get out 3 bowls, a large, a medium, and a small one.
In the large bowl but the buckwheat flour, sugar, salt, baking powder, and baking soda, and mix together. In the medium bowl put the egg yolk, yogurt, oil, and molasses and mix together. Into the small bowl put the egg white and beat until stiff.

To combine: Pour the liquid ingredients into the dry ingredients and mix. You may need to add a little water to get the batter thin enough to fold in the egg white. Then fold in the egg white.

Fry immediately on a hot greased (or sprayed with non-stick spray) griddle or skillet. This recipe makes 4 (4 to 5 inch) pancakes and nutritional information is for one pancake.
