    1 large white onion, chopped
    1 oz. linguica, diced
    2 cups summer squash or yellow squash, sliced
    0.5 cup chicken broth (low-sodium or regular)
    nonstick spray


Saute one large white onion with linguica, until onion is translucent. Add squash and stir to mix. After squash has become a bit soft, add chicken broth. Place in 450 degree oven for 10 minutes, until squash and onions have become slightly brown.

Serving Size: 4 1/2 cup servings
