    1 cup shredded carrots
    1 cup julienned diakon radish or other type radish
    1/2 cup sushi vinegar
    salt and pepper, to taste if desired


I have used regular red radishes alone, too.


Shred the carrots and julienne the radish.
Add vinegar and salt and pepper.
Mix and cover in an air tight container.
Chill for at least 2 hours or more.
Serve with Lettuce Wraps or Bahn Mi sandwich.

Serving Size: makes 4 servings, about 1 cup servings
