    2 boneless thick cut pork loin chops, cut into quarters
    1 large onion, roughly chopped
    8 oz. baby Bella mushrooms, sliced
    4 stalks celery, roughly chopped
    8 oz. baby carrots
    Cooking Spray
    salt and pepper
    1 teaspoon Tabasco sauce
    garlic powder
    onion powder
    1 can 98% fat free Cream of Celery Soup
    1 can Vegetarian Vegetable Broth
    1 can water


In a large skillet, spray with cooking spray, then sear both sides of the pork chops. Remove the chops and place them in your slow cooker. In the same skillet, saute onions, mushrooms, celery, and carrots until just soft. Move vegetables to slow cooker. Combine soup and broth in a bowl. Add Tabasco sauce and stir. Pour over the chops and vegetables. Fill the soup can with water and pour into the skillet to deglace. Scrape up all the bits on the bottom. Pour this liquid into the slow cooker. Cook on high, 5-6 hours.
