    1 lb lean ground turkey
    1 medium onion, chopped
    3 cloves garlic, chopped
    3 cups draiined canned black beans
    1 28 oz can petite diced tomatoes
    2 cups frozen corn
    1 1.25 oz packet taco seasoning mix
    1 cup water


In a large nonstick skillet saute the ground turkey with the chopped onions and garlic.
When the meat is browned and the onions are tender add the taco seasoning and the water.
Stir well to combine.
Cook about 2 minutes over medium heat.
Add the corn, black beans and diced tomatoes.
Reduce heat and simmer partially covered for about 30 minutes or until as thick as desired.

Makes 4 dinner sized portions.

Serve with a sprinkling of shredded colby jack cheese, a dallop of sour cream and any other taco toppings you like.
