    For crust:
    2 1/4 cups flour
    1/2 tsp. salt
    1 cup shortening
    ice water

    For Filling:
    2 1/2 pounds peach wedges
    1/2 cup light unpacked brown sugar
    1 lemon, juiced
    2 Tbsp. corn starch, or quick-cooking tapioca
    1/2 tsp. almond extract, or vanilla extract
    1/2 tsp. cinnamon
    1/4 tsp. nutmeg
    1/4 tsp. salt


For Crust:
1. Combine flour and salt. Cut in shortening a little bigger than the size of peas. Gradually add ice water to form a soft dough (when the dough barely starts sticking together and makes a ball when you are mixing it.)

2. Divide into two discs. Wrap in plastic wrap and refrigerate for 10 minutes.

3. Take one dish of dough and put a little flour on each side. Take a rolling pin and shape into a large flat circle. Carefully place the circle inside a 9" pie pan.

For Filling:
1. Combine all filling ingredients. Pour into pie shell.

2. Roll out second disk and carefully lay it on top of filling in pie plate. Roll and crimp edges to seal it. Make slits in top of crust for ventilation.

3. Brush crust with milk and sprinkle sugar-in-the-raw on top.

4. Chill pie for 30 minutes. Meanwhile, preheat the oven to 400F. Bake pie for 30 minutes with protective ring (or foil) around edge to prevent from burning. Remove protective ring (or foil) and bake another 30 minutes.
