Ingredients

    1 head cauliflower, cut in bite size pieces
    2 C Co-Jack cheese, shredded
    1/2 C sour cream
    24 oz bacon wrapped pork tenderloin (cooked and diced, should be approx. 5 Cups)
    1 T garlic powder
    1 T onion powder
    1 T italian seasoning
    3 T butter

Directions

Boil cauliflower in small amount of water till crisp/tender.
Drain if water hasn't cooked away.
Add butter and saute till butter is slightly brown.
Add the rest of the ingredients.
Stir to blend.
Place in pan and put in preheated (350) oven till heated through and cheese is melted or simply continue to stir on stove till cheese is melted.

  • Good for leftover pork. I had no Colby-Jack cheese so I used Swiss and no Italian seasoning so I used equal parts oregano, basil, and marjoram. Also added salt & pepper (about 1/2 tsp each). No butter. Used plain pork roast; I fried some bacon pieces and included the fat. Increased the sour cream. - 10/31/16
