Ingredients

1 tbsp. olive oil
1 c. frozen chopped onions
1 pkg. (4 oz.) Boca Meatless Ground Burger
1 tbsp. Tastefully Simple Wahoo! Chili or chili powder
1 tsp. Tastefully Simple Seasoned Salt or plain salt
1/2 tsp. (or to taste) Tastefully Simple Fiesta Party Dip Mix or other no-salt spicy seasoning
blend
1/2 c. pureed pumpkin
1/2 c. reduced-fat sour cream
1/2 c. reduced-fat shredded Cheddar Cheese
4 Flatout Original high-fiber wraps
1 c. Tastefully Simple Roasted Tomato Salsa or other salsa
Directions
Heat oven to 400 degrees.
Place oil in nonstick skillet; heat over medium heat until hot. Add Boca ground burger, onions, Wahoo! Chili, Fiesta Party Dip Mix and Seasoned Salt; sautee 5 minutes until onions are soft. Remove from heat. Add pumpkin and sour cream; stir until well combined. Mix in cheddar cheese.
Place 1/2 of Boca mixture on each of 2 wraps; top with remaining wraps. Spray baking pan with nonstick spray. Place quesadillas on pan; spray tops with nonstick cooking spray. Bake at 400 degrees for 8-10 minutes or until wraps are crisp. Cut each quesadilla into 8 pieces. Serve with Roasted Tomato Salsa.
