Ingredients

    2 tsp. olive oil
    1/2 cup chopped onion
    2 cloves garlic, minced
    1 lb. boneless skinless chicken breasts, cut into 1" pieces
    1 (15- oz) can black beans, drained and rinsed
    1 (4- oz) can diced green chilies
    1/3 cup salsa
    2 Tbs. chopped fresh cilantro
    5 (8-inch) flour tortillas
    1 cup shredded monterey jack cheese

Directions

Preheat oven to 400 degrees. Heat oil in a large skillet over medium heat. Add onion and garlic and saute 2 min. Add chicken and saute 5 min until golden brown and cooked through. Stir in black beans, chilies and salsa and simmer 5 min, until sauce thickens and reduces. Remove from the heat and stir in cilantro. Top each tortilla with an equal amount of chicken mixture. Roll up tortillas and place side by side in a shallow baking dish. Top with shredded cheese. Bake, covered, 15 minutes, until cheese is golden and gooey.
