This is a simple recipe for hearty, dense whole wheat bread. I use it for sandwich bread, hot dogs, rolls, and hamburger buns. This is a simple recipe for hearty, dense whole wheat bread. I use it for sandwich bread, hot dogs, rolls, and hamburger buns.
Number of Servings: 16


    5 teaspoons active dry yeast
    1/4 cup warm water
    3 tablespoons sugar
    1 tablespoon salt
    2 cups hot water
    3 cups white whole wheat flour, divided
    1/3 cup canola oil


If you want a lighter, fluffier bread, feel free to substitute all purpose flour.


1. Proof the yeast by combining it with the 1/4 cup warm water in a small glass or ceramic bowl. Let it sit until bubbles form on top, at least 10 minutes.
2. While your yeast is proofing, dissolve the sugar and salt in the 2 cups of hot water by stirring together in a large mixing bowl. If you're lucky enough to have a stand mixer, you can put this in your stand-mixer bowl.
3. Place 3 cups of the flour into the mixing bowl and mix gently until combined.
4. Add proofed yeast mixture, but do not stir yet.
5. Add oil on top of yeast, and do not stir.
6. Add remaining 3 cups flour and mix gently until combined.
7. Place a wet towel over the bowl and allow the dough to rise in a warm place for one hour. I live in TX, so I always let my dough rise on the front porch. Any warm (but not hot!) place will do.
8. Punch down the dough. Knead gently until pliant and easy to shape. Minimal kneading required. This step shouldn't take long.
9. Shape dough into two loaves (or buns, or whatever you like) and place onto a large cookie sheet.
10. Cover prepared loaves with a wet towel and allow to rise in a warm place for at least one hour.
11. Bake in a 375 degree oven for 20 minutes (or more, if necessary).
12. Enjoy!
