    2 c. brown rice
    3.5 cups low-sodium chicken broth
    coarse grained salt
    1 lg. sweet onion, diced
    1 (14oz) can black beans, rinsed and drained
    1 c. fresh or frozen corn kernels
    cracked black pepper


Place rice and chicken broth in an 8-c. glass measuring cup or microwave-safe bowl. Microwave uncovered on high for 10 minutes. Microwave uncoered on medium-low for 15 minutes more. Do not stir rice while cooking. Season w/ salt and fluff w/ fork.
Cook sausage in lg. nonsick skillet over medium-high for 3 min. or until it turns golden brown. Add onion and cook until onion has softened and sausage is heated through, 5-7 minutes. Add beans and corn, toss to combine and cook, stirring often until heated through. Season w/ salt and pepper.
