    2 frozen 9" pie crusts
    10 oz of shredded extra sharp cheddar cheese
    9 extra large eggs
    2 cups of sliced mushrooms
    2 TB unsalted butter
    8 slices of Applewood bacon
    5 cups fresh spinach
    3/4 cup Olive Oil mayonaise
    1 cup milk, 1%


Bake at 400 degrees for 45 minutes topped with foil
Bake additional 15 minutes with foil removed

Serving Size: Makes 8 servings, 4 per pie
