    4 baking potatoes, washed
    1 1/2 Tbsp. canola oil or shortening
    1/2 stick unsalted butter
    1/4 cup bacon bits
    1/2 cup fat free sour cream
    3/4 cup reduced fat cheddar cheese, shredded
    1/2 cup almond milk, or reduced fat milk
    1 tsp. salt
    2 green onions, chopped
    1/4 tsp. ground pepper


Important: If you plan to freeze the potatoes to save for another date, do NOT add the green onions.


Preheat oven to 400F.

Place the potatoes on a baking sheet. Rub them with the oil an bake for 1 hour, making sure they're sufficiently cooked through by stabbing with a fork.

Slice the butter into pats. Place in a large mixing bowl and add the bacon bits and sour cream. Remove the potatoes from the oven. Lower the hear to 350F.

With a sharp knife, cut each potato in half lengthwise. Scrape out the insides into the mixing bowl, being careful not to tear the shell. Leave a small rim of potato intact for support. Lay the hollowed out potato shells on a baking sheet.

Mash the potatoes into the butter, bacon and sour cream. Add the remaining ingredients (using only 1/2 the cheese) and mix together well.

Fill the potato shells with the filling. Top each potato with the remaining cheese. Bake in the oven for 15 to 20 minutes until heated through.
