Introduction

I like my chili with meat only or beans only; don't mix them! This is my meat-free chili. I like my chili with meat only or beans only; don't mix them! This is my meat-free chili.
Number of Servings: 10

Ingredients

    1# (2-1/2c) dry black beans
    1qt canned tomatoes
    1 onion, chopped
    1 packet of Chili seasoning or chili seasonings of your choice.

Tips

Serve sprinkled with shredded cheddar and freshly chopped onions. Serve with baked tortilla chips.


Directions

Prepare beans as usual, bringing to a boil the night before, then turning off and letting soak over night. In the morning, drain and cover with fresh water. Bring to boil and cook until soft. Drain, add tomatoes, onions and chili seasoning. Simmer for 1 hour until onions are soft and flavors meld.

Serving Size: Makes 6 1c servings
