Ingredients

    2/3 cup unsweetened soy milk
    1/2 tablespoon apple cider vinegar
    1 teaspoon salt
    Spices, as desired (mustard, paprika, garlic, etc.)
    1 1/3 oil

Directions

Pour soy milk & vinegar into blender. Pulse together a few times, then let it sit for a minute. It will curdle, but this is what you want.
Add salt and spices. Blend together on high.
Slowly drizzle in oil while blending on high. Continue to blend for 30-60 seconds or until thickened.

Serving Size: 2 cups (32 one-tablespoon servings)
