    For the wheat "meat":
    1 cup vital wheat gluten
    1 cup water

    For the broth:
    2 cups water
    1/2 cup nutritional yeast
    4 TB tamari
    2 tsp onion powder
    2 tsp dried sage
    1 tsp dried thyme
    1 tsp salt
    1/2 tsp celery seed


You can use right away or you can transfer to an oiled dish and bake at 350 degrees fora chewier texture. (I sometimes do it for longer to dry it out a bit.)


Put in a pot on the stove all the broth ingredients and stir well. While it's coming to a boil, mix the cup of gluten and cup of water and need for at least five minutes. Slice or tear off pieces of the gluten and drop in the broth once it is boiling. Cover and simmer for an hour, stirring every ten minutes or so, until the broth has been absorbed into the gluten. (careful to keep it at a simmer, I often end up overflowing the pot with this recipe if I don't watch it carefully.)

Serving Size: make four 1/2 cup servings (ish, I'm kind of guessing)
