    2 1/2 c vegetable broth
    3/4 c dry lentils
    1/2 t salt
    1 bay leaf
    1/4 c olive oil
    1 large red onion, chopped
    1 t chopped fresh thyme
    1/2 t chopped fresh oregano
    1/2 t salt
    1/2 t pepper
    8 oz vegan sausage, cut into 1/4" slices
    1 bunch kale, stems removed and leaves coarsely chopped
    12 oz package rotini


1. bring broth, lentils, salt and bay leaf to boil, reduce heat to medium-low, cover, and cook about 20 minutes. Discard bay leaf.
2. Heat olive oil in skillet, stir in onion, thyme, oregano, 1/2 t salt, and pepper. Cook and stir for 1 minute, then add sausage and cook for 10 m.
3. Bring a large pot of water to boil, add kale, and rotini, and cook 8 mins. Drain, return to pot, and add lentils and onion mixture.
