    Nonstick spray
    about 1/4 cup sliced onions
    a few mushrooms, sliced
    an egg white
    1/4 cup Trader Joe's Soycutash (or just use some corn)
    2-3 oz tofu
    1 Morningstar Farms breakfast patty (or similar)
    1/3 cup Yves meatless ground (or similar)

    Seasonings: Nutritional Yeast, garlic, cumin, pepper, onion powder.


Thaw Breakfast patty & Soycutash (or use frozen/canned corn)

Saute onions & mushrooms on low-medium heat. Add tofu & let cook until a little crispy.
Add egg white & scramble until cooked.
Add Meatless ground, thawed vegetables (soycutash or just corn) and crumbled thawed breakfast patty.
Scramble around some more, add cumin, pepper, garlic, onion powder to taste.

Top with Nutritional Yeast.

Also yummy on corn tortillas.
