    Asparagus 20 medium (small finger) chopped into 1 inch pieces
    1 cup mushrooms sliced
    1/4 cup onion chopped
    1 tbsp Smart Healthy Balance margarine
    1 tbsp constarch
    Salt and pepper to taste
    1/8 tsp ground nutmeg
    1 1/4 skim milk 2%
    8 oz Captain's Choice Imitation Crab
    6 tbsp parmesan cheese, grated


Makes 6 (1 cup) servings
Boil 2 quarts water with salt for blanching asparagus, add whole asparagus to boiling water. Meanwhile slice mushrooms and chop onions, saute in margarine in a medium sauce pan. When asparagus is crisp remove from boiling water and rinse in cold water to stop cooking process, it should not be mushy. Stir in cornstarch to mushroom and onion mixture till thick and bubbly, cook for 1 minute. Add milk to mixture and stir to remove clumps, when smooth add crab and asparagus and heat through. Stir in parmesan cheese and serve.
