    2 lbs yams
    2 tbs vegetable broth
    2 tbs chopped green chiles
    2 tsp lime juice
    1 tsp minced chipotle in adobo
    3/4 tsp ground cumin
    1/2 tsp minced garlic
    15 oz black beans, cooked
    8 whole wheat tortillas
    Fresh salsa of your choice


Put the yams with enough water to cover in a saucepot and boil, cover, and simmer for about 12 minutes or until soft. Drain the water and add vegetable broth. Mash until smooth, then stir in green chiles, lime juice, chipotle, cumin, and garlic. Mix well; stir in black beans and mix again.

To make tortillas, spread some of the mixture on half of a tortilla, then fold over and grill until heated through. Top with salsa and/or guacamole.

Serving Size: Makes 8 yamadillas
