    Nonstick cooking spray
    1/2 cup white whole wheat flour or whole wheat flour
    1/4 cup quick-cooking rolled oats
    3 tablespoons packed brown sugar
    2 tbsp flaxseed, ground
    1/2 tsp baking powder
    1/4 tsp ground cinnamon
    dash salt
    1 ripe banana, cut up
    1/4 cup skim milk
    1 egg white
    1 tbsp coconut oil


Preheat oven to 400 degrees. Lightly coat six 2 1/2 inch muffin cups with spray or line with paper bake cups and coat insides of paper cups. In medium bowl, stir together flour, oats, brown sugar, flaxseed, baking powder, cinnamon and salt. Make a well in the center of the flour mexture, set aside. Blend or mix very well banana, milk egg and oil. Add banana mixture all at once to flour mixture; stir just until moistened (batter should be lumpy). Spoon into muffin cups, filling about 3/4 full. Bake for 18-20 minutes or until lightly browned. Cool in muffin cups on wire rack for 5 minutes. Remove from muffin cups and serve warm.
