Introduction

We're on a new high-protein low-carb diet, with minimums for protein and free veggie carbs... so while this would normally serve 6 with added rice, we're eating 1.5 servings of this alone for our family of 4.

Also, mainly I am sharing my recipes to just let my family members do their own tracking. If it works for you, great, if not, feel free to leave constructive criticism on how to improve it, but please be gentle.

Number of Servings: 6

Ingredients

    1/4 cup Canola oil
    1 onion
    3/4 cup carrots
    3/4 cup celery
    1.5lbs Shrimp
    2 boneless skinless Chicken Breasts
    4 boneless skinless Chicken Thighs
    1 cup broccoli
    1 cup green beans
    3/4 cup sugar snap peas
    1/2 cup mushrooms
    1 cup Lighthouse Sesame Ginger Dressing

Directions

Prechop all the veggies and the chicken.

In a hot skillet, heat oil and saute onions, carrots and celery until onions are translucent. Toss in the shrimp and cook until JUST pink and opaque, pull them out and set them aside so they don't overcook.

Add chicken to the skillet and cook until thoroughly done. Add the remaining vegetables and toss to cook until the beans are bright green and still crisp.

Add the shrimp back into the skillet and toss with Sesame Ginger Dressing. Serve!

Serving Size: Makes 4 servings if eaten alone, or 6 if you add rice.
