    .5 C Old fashioned oats
    .5 C whole wheat flour
    .5 C canned pumpkin
    1 tsp. baking powder
    .5 T Cocoa
    1 tsp. Cinnamon
    1/2 T pumpkin pie spice
    1 pinch of salt
    1 egg
    .5 C Unsweetened almond milk
    .5 C water


Add in walnuts, and top with sliced banana for an enjoyable treat! Top with light cool whip and you have pumpkin pie pancakes.


Mix dry ingredients, then add wet ingredients. Spray cooking spray on pan or griddle. Use 1/4 cup measuring cup to place pancake batter on cooking surface. Use the bottom of the cup to spread batter. cook until brown and bubbly, then flip and cook another minute or so.

Serving Size: Makes 4 servings of 2 pancakes each.
