Tasty snacks full of fuel. Holds together well and is a very handy and cute shape! Tasty snacks full of fuel. Holds together well and is a very handy and cute shape!
Number of Servings: 12


    1 egg
    1/4 cup maple syrup
    1 tsp veg oil
    1 cup large flake oats
    2 tbs pumpkin seeds
    1/4 cup dried cranberries
    2 tbs almonds


Can substitute other nuts, seeds or dried fruits for ones you have on hand or enjoy. Also can add chocolate chips, coconut,, etc. Can also use corn syrup or peanut butter in place of some or all the male syrup.


In a medium bowl, whisk egg with maple syrup and oil. Stir in all the other ingredients. Spray a muffin tin with cooking spray (or oil the bottoms of each part of the tin). Spoon the granola mixture into the muffin tin, separating the mixture into 12 portions and patting it down with the back of a spoon.

Bake in a 350 degree oven for 10-12 mins until golden around the edges. When done. let cool a few minutes then run a knife around the edge of each one to release them. Let the coins cool on a rack.
