    1 T olive oil
    1 large onion, chopped
    2 bell peppers, chopped
    2 stalks celery, chopped
    2 T minced garlic
    1 pound Bistro Sensation's Habanero with Mont Jack Cheese Chicken Sausage, cubed
    36 oz raw shrimp
    2 cups brown rice, cooked
    14.5 oz can diced tomatoes
    10 oz can rotel tomatoes
    1.5 tsp dried thyme
    1 T Tony Chachere's Creole Seasoning


Add Tony Chachere's to the shrimp and mix to coat. Saute onion, bell pepper, celery and garlic in olive oil until tender. Add sausage and shrimp to vegetable mixture. Saute until shrimp is pink. Add diced tomatoes, rotel tomoatoes, and dried thyme. Cook until heated through. Mix in brown rice.
Makes 15 1-cup servings.
