Ingredients

    1 med summer squash, peeled and diced
    1 med eggplant, peeled and diced
    2 med tomatoes, cut in chunks
    2 cans of vegetarian beans in tomato sauce
    1 box of macaroni and cheese (kraft)
    1 can of chicken broth
    1 can of water
    9 oz smoked sausage, 1" chunks
    4 oz mozzarella shredded cheese
    lemon pepper
    ground cumin
    package of taco seasoning
    2 tbsp olive oil

Directions

heat the oil til hot in large fry pan
add the summer squash, eggplant and cook til tender
add tomatoes, beans, macaroni and cheese, chicken broth and water. stir in the cheese seasoning from the mac and cheese.
add the smoked sausage
add lemon pepper, cumin and taco seasoning

cook in fry pan for 30 minutes
cover with the mozzarella cheese and cover and cook another 10 minutes til cheese is melted.
