    *Flour, white, 4 cups
    Granulated Sugar, 2 cups
    Baking Soda, 2 tsp
    Baking Powder, 2 tsp
    Salt, .5 tsp
    Cinnamon, ground, 2 tsp
    Ginger, ground, 2 tsp
    Cloves, ground, 2 tsp
    Allspice, 2 tsp
    Honey, 1 cup
    apricot jam, 2 tbsp
    Regular Coffee, .75 cup
    Canola Oil, 1 cup
    Oranges, 1 large ,juice and zest
    Almonds, 1 cup sliced
    egg whites, fresh, 4 large
    Egg Yolks, 4 large


12 slices per loaf

beat egg white to firm peaks, set aside.
sift and combine all dry ingredients
combine and mix wet ingredients, blend well.
combine dry ingredients 1 cup at a time to wet ingredients, mix well
fold 1/3 of egg whites gently into batter; then combine remaining 2/3s, incorporating gently to keep air in the whites.
divide into 3 greased adn floured loaf pans, bake at 350 for 60-75 minutes, checking every 20 minutes with a knife - when it comes out clean, place loaf pans on rack to cool, then turn out loaves and cool completely before wrapping in saran and foil to store. Cut each loaf into 12 slices
