    2 12 oz pkgs fresh broccoli
    1 tbsp salt
    2 tbsp butter
    2 tbsp flour
    1.5 cups milk
    3 oz cream cheese
    4 oz blue cheese
    .25 tsp salt
    .33 cup finely crushed saltine crackers


Can substitute 20 oz cauliflower for broccoli.


Preheat over to 350 degrees.
Chop broccoli and cook with 1 tbsp salt in a covered pan of boiling water for 3 minutes. Drain.
Melt butter in medium saucepan.
Whisk in flour until smooth and cook, whisking constantly, for a minute.
Gradually whisk in milk and cook over medium heat, whisking constantly, until mixture is thickened and bubbly.
Stir in cheeses and remaining salt until melted.
Stir in broccoli.
Place in lightly greased 11x7 baking dish and sprinkle with crackers.
Bake at 350 degrees for 30 mins.
