Ingredients

    Bottom Layer
    cup unsalted butter
    cup granulated sugar
    1/3 cup cocoa powder
    1 large egg beaten
    1 tsp vanilla
    2 cups graham cracker crumbs
    1 cup coconut

    Middle Layer
    cup unsalted butter softened
    2-3 Tbsp full fat milk or cream
    2 Tbsp vanilla custard powder or instant vanilla pudding powder
    1 tsp vanilla
    2 cups powdered sugar

    Top Layer
    1 cup semi sweet chocolate chips
    1 Tbsp unsalted butter softened

Directions

Bottom Layer
1. Melt butter in a medium sauce pan at LOW heat.

2. Stir in sugar and cocoa powder; gradually whisk in beaten egg.

3. Cook stirring constantly until mixture thickens. (approx. 1 minute)

4. Remove from heat and stir in vanilla, coconut and graham cracker crumbs.

5. Press the mixture firmly and evenly into 9x13 Pyrex baking dish.

6. Cover with Saran Wrap and refrigerate until firm, about 1 hour.

Middle Layer
1. Cream butter in medium bowl.

2. Add in milk, vanilla custard or pudding, vanilla and powdered sugar and mix. If mixture is too thick to spread add milk a little at a time mixing after each addition.

3. Spread the filling over the bottom layer and cover with Saran Wrap. Refrigerate for 30 minutes.

Top Layer
1. Place 1 cup of water in sauce pan; place heat proof bowl over sauce pan and bring water to a rapid boil.

2. Add butter and chocolate chips to bowl and mix until fully melted.

3. Spread evenly over middle layer and refrigerate without covering for 1 hour.

4. Bring Nanaimo bars to room temperature before cutting, this will avoid cracking.
