Ingredients

    3 cups flour
    1 cups granulated sugar
    1 tsp salt
    4 tsp baking powder
    2/3 cup vegetable oil
    2 eggs
    2/3 cup milk or enough to fill the 2 cup line with the eggs and oil
    2 cups fresh blueberries

    Struesel Topping
    1 cup brown sugar
    1/3 cup flour
    cup unsalted butter, cold and cubed
    1 tsp cinnamon

Directions

1. Preheat oven to 400 degrees. In a small bowl combine brown sugar, butter, flour and cinnamon for streusel topping. Using a fork blend well until mixture is crumbly. Set aside.

2. In a large bowl sift together flour, sugar, salt and baking powder.

3. In a 2 cup measuring cup combine oil, eggs and enough milk to reach the 2 cup mark line. Using a fork, mix until eggs are broken up.

4. Add wet ingredients into the dry ingredients and mix until almost incorporated with a hand mixer. DO NOT OVER MIX.

5. Slowly fold in the blueberries until they are coated with batter. DO NOT OVER MIX.

6. Line regular muffin tins with paper and fill each to the top, leaving a little bit of room to add streusel topping.

7. Sprinkle plenty of streusel topping over each muffin generously.

8. Bake for 20-25 minutes or until tooth pick inserted in center comes out clean.
