Ingredients

    Egg, fresh, 12 large
    Breakfast Sausage, 16 oz, browned and drained
    Hashed Browns, 4 cups
    Salsa, 1 cup
    Shredded colby/monteray Jack Cheese, 1 cup

Tips

Serve with tortillas and sour cream if desired.


Directions

Brown and drain sausage. Put hashbrowns in large pot with small amount of water, and brown. Crack eggs in a large bowl and wisk until mixed. Add eggs, sausage and salsa to hashbrowns and cook until eggs are done, stirring constantly to prevent the bottom from burning. Pull off burner and stir in shredded cheese

Serving Size: Makes 16 1/2-cup servings
