    Flour, white 2 cups
    Bakin Powder 2 tsp
    Baking Soda 1 tsp
    Salt 3/4 tsp
    Butter, unsalted 1/2 cup
    Granulated Sugar 1 cup
    Egg, fresh 2 large
    Banana, fresh 1 cup, mashed
    Pecans, 1 cu, chopped


Preheat oven to 350*

Sift together flour, baking powder, baking soda and salt. Cream butter (room temperature) sugar and well beaten eggs.
Slowly mix in dry ingredients.
Fold in bananas and nuts (optional). Put into muffin tins (with or without liners, if no liner is used, spray with Pam).
Bake for 20 - 23 minutes or until a toothpick inserted in the center comes out clean.

Serving Size: Makes 12 muffins
