Low-fat fajita's for mexican night! Low-fat fajita's for mexican night!
Number of Servings: 6


    4 boneless skinless chicken breasts, pan fried in 2 tsp. olive oil
    1 large green pepper sliced
    1 large red pepper sliced
    1 large onion sliced
    Old El Paso fajita seasoning packet
    1 cup water
    6 Fajita shells, makes 6 large servings


Add your own fixings afterwards! Chopped onion, tomato black olive and lettuce are my favorites. Add beans or lentils for extra protein.


Pan fry chicken breasts in 2 tsp olive oil until no longer pink. Slice into thin strips. Add 1 large green pepper, 1 large red pepper, 1 large onion, all thinly sliced into the meat mixture. Add Old El Paso seasoning packet and 1 cup of water. Cook until onion and pepper are crisp-tender.

Serving Size: Makes 6 large fajitas or 8 medium fajitas
