Ingredients

    2 leeks
    6 potatoes, chopped (peeled or not)
    some onion if you like
    two veggie stock cubes
    3 pints of water (or 6 cups) or more, as you like
    salt and pepper

Directions

Chop leeks and potatoes and onion, add to large cooking pot. Add water and two stock cubes. Cook and let simmer for about 30 minutes. Add salt and pepper to taste.

Serving Size: Makes 5 or 6 bowls of soup. Add more water for a thinner soup.
