    16oz dry lima beans
    .25 cup parsley, chopped
    2 Tbsp fresh mint , chopped
    1Tbsp fresh chives, chopped
    Salt and pepper to taste (1 dash)


if you like ,drizzle some vinaigrette over beans.


soak dried beans overnight,rinse well.
put beans in a pot on the stove ,add 1 quartered onion,2 celery stalks cut into 1" pieces 1 carrot peeled and cut into 2" pieces add salt and pepper to taste add water to cover and cook on low heat until beans are done, dicard vegetbles and drain beans,let cool
then you add the chopped herbs and serve.

Serving Size: makes 8 1/2cup servings

  • So, my daughter came over to visit yesterday and, oddly enough, she asked me to cook her some dried lima beans! As a kid her grandma used to cook them and she loved them. I didn't know of your recipe at the time, however. LOL, we seem to be on a similar schedule! Sounds good though! - 9/22/12
