Ingredients

Shrimp, raw, 15 medium
Almond (raw, unsalted - 1 almond), 25 serving
Hormel Bacon Bits, 2 tbsp
Egg white, fresh, 2 large
Salt, 1/2 tsp
Pepper, red or cayenne, 1 tsp
Pepper, black, 1 tsp
Milk, nonfat (skim milk), 1/8 cup
Paprika, 1 tsp
Basil, 1 tsp
Lemon Juice, 1 tbsp
Bib lettuce, 4-6 leaves
Directions
1. Pre-heat oven to 425.
2. Cut shrimp into thirds to make bite size pieces.
2. With a food processor, grind almonds into as fine a powder as your processor allows.
3. Thoroughly mix almond flour, egg whites, skim milk, lemon juice, salt, pepper, red pepper, paprika, and basil.
3. In bowl, stir together shrimp, bacon bits, and batter until shrimp are thoroughly covered.
4. Let sit for 5 min
5. Place shrimp evenly on a greased pan (feel free to use a non-stick spray).
6. Place pan in oven for 5 minutes. Then move pan 5" from broiler and broil additional 2 min or till shrimp are browned.
7. Place a few shrimp in lettuce to make wraps.
