    1 1/2 litre Vegetable Stock
    2 cups Red Lentils
    2 Garlic Cloves
    1 1/2 Large Onions, diced
    Salt taste
    1/2 tbls Black Pepper (ground)
    1/2 Tbls Cumin
    1/2 Curry Powder
    1 1/2 Large carrots, Diced
    250 grams Greens Beans, Chopped
    1 Large leek, Chooped
    3 Celery Stick
    1 1/2 Large Red Capsicums,diced
    1 bunch Spinach, Chopped
    2 Medium Tomatoes, diced
    1 Medium Egg plant
    4 Tbls Tomatoes paste
    1 Tbls Parsley Fresh, Chopped
    1 Tbls Oregano, chopped
    1 Tbsp fresh basil, chopped


Red Lentils (thoroghly wash & drain)
Add Veg Stock, red lentils, salt, pepper,onions & garlic to a pot and bring to the boil
Once boiling, reduce to a simmer and cover.
Chop veg and add to pot the hareder veg 1st
then add seasons and paste
Keep pot coverd stir every 10 to 20 minutes
Cook to 60 to 90 minutes
