    3.5 cups of raw carrots, finely shredded (about 4 large)
    1/2 cup finely chopped onions
    1 Tbsp canola oil
    1 Tbsp white vinigar
    1 Tbsp sugar
    salt, pepper


For best resutls shred carrots fresh, they will be jucy.


Stir together onions, vinigar and oil. Season with salt, pepper and sugar. Toss with shredded carrots. Let sit for 30 minuts before serving.

Serving Size: makes 8 1/2 cup srvings
